Swimming Bear Summer Cupcakes Recipe

Ingredients
- 1 (15.25-ounce) box white cake mix, plus ingredients to prepare it
- 1 (3-ounce) package blue Jello
- 1½ cups boiling water
- 1 (16-ounce) container white icing
- Blue food coloring
- 44 bear graham crackers
- 11 peach gummy rings
- 11 rainbow sour belt bites
How To Make These summer Cupcakes
- Prepare the cake mix according to package instructions and bake 22 cupcakes. Let them cool completely before moving on.
- Use a wooden skewer or straw to poke holes across the tops of each cupcake.
3. In a mixing bowl, whisk together the blue Jello powder and boiling water until fully dissolved. Carefully spoon the Jello mixture into the holes in each cupcake. Chill in the refrigerator for at least one hour so the Jello sets and infuses the cake.
4. When you’re ready to decorate, mix three to four drops of blue food coloring into the white icing and stir until you achieve your preferred shade of “pool water” blue.
5. Spread the icing over each cupcake. For half of the cupcakes, place a bear graham cracker into the center of a peach gummy ring and set it on top to create a bear floating in an inner tube. For the other half, lay a piece of rainbow sour belt across the top like a pool raft. Use a dab of icing to attach a bear on top of the raft, then press an additional bear next to it on the same cupcake to give the appearance of a swimming companion.
