1. Place the pudding mix and cold milk into a large bowl and whisk together for 2 minutes until there are no more lumps.

2. Stir in the peanut butter until well incorporated. Set aside for 5 minutes for the pudding to set and thicken.

3. Fold in the thawed Cool Whip until combined. Do not over-mix.

4. Fill each of the plastic cups with layers of Oreo crumbs, prepared pudding, and then top with more Oreo crumbs.
5. Top with two tablespoons of toasted coconut shreds, one Ghirardelli jack o lantern chocolate, and two mellowcreme pumpkins. Serve and enjoy!
Important Recipe Notes

I added a little peanut butter in the pudding to make it chocolate-peanut butter flavored, but you can use any flavor instant pudding like butterscotch, vanilla, cheesecake, pistachio, or oreo. Or you can add whatever spread you like such as nutella or cookie butter.
If you keep it simple without adding a spread and you choose a white pudding like vanilla, cheesecake, or white chocolate, you can add a drop of orange gel food coloring to give it a pop of color for halloween.
Try it with different flavored Oreos like Reese’s, chocolate, birthday cake, toffee, peanut butter, mint, or other limited edition seasonal flavors like pumpkin spice, cinnamon bun, apple pie, or orange creme.
The Ghirardelli jack-o-lanterns come in different flavors like caramel and caramel apple which both have a caramel center.
I used toasted coconut shreds but you can use the untoasted ones and/or toast it yourself. If you want to add food coloring to it, you can place some untoasted coconut shreds into a ziploc bag with 1 drop of green or orange food coloring and then shake it around until they are evenly colored.
Since the jack o lanterns are tall, they may start leaning over. Just make sure you stick them in the “dirt” enough so they stay in place. You can even put a little mound of coconut shreds behind them to help hold them upright if needed.
Homemade whipped topping will also work if you don’t want to use Cool Whip.
You can add more toppings like candy eyes or bones if you want to give it a spookier feel.
