How To Make Mini Pumpkin Pie Rice Krispie Treats

1. In a large pot over medium heat, melt 5 tablespoons butter.

2. Add 5 cups mini marshmallows and stir continuously until melted.

3. Fold in 5 cups of Rice Krispies cereal until coated in the marshmallow mixture.

4. Spray muffin tin with cooking spray. Take about 1/4 cup of Rice Krispie mixture to press it into each of the muffin cavities to form a mini crust. Set aside as you make the filling.

5. In the same large pot, melt 3 tablespoons butter.

6. Stir in the pumpkin puree and pumpkin pie spice until well incorporated.

8. Stir in 2 drops of orange food coloring. You can add another drop if you want more color.

10. Put about 2-3 tablespoons of the “filling” into the center of each mini crust and press it in so they stick together.

11. Let it set for 20 minutes before serving. Top with whipped cream if desired.

    Important Recipe Notes

    You can skip the pumpkin puree if you like. It’s not much and just moistening the center of the pie. It gives it some more pumpkin flavor and mellows out the sweetness of the marshmallows just a bit. However, you can just add pumpkin spice and maybe some vanilla extract if you like.

    Another idea for some pumpkin flavor is to use pumpkin flavored marshmallows. You may want to only use it for the “filling” as it will change the color of the “crust” orange.

    Instead of pumpkin spice you can use ground cinnamon. A mixture of the two will work as well.

    You can skip the pumpkin altogether and opt for something like mini chocolate Rice Krispie pies. Add some cocoa powder to the “filling” to make it chocolatey or use cocoa krispies. If you want to moisten the filling a bit like in this recipe, you can even add a little prepared chocolate pudding when mixing.

    If you don’t have a muffin tin, you can use a pie plate and make a larger pie. You can also use a baking sheet or pan and make the crust in an even layer. Then add the “filling” on top of the crust and press it together. Cut into squares and top each with whipped cream if desired. It won’t be shaped like a pie, but the squares will still be just as good!

    The longer it sits, the more it will harden! Let it sit for 20 minutes just to firm up (it firms up pretty quickly off the heat) and then serve. If it becomes too hard, you can always give it a quick microwave for 5-10 seconds. It’s really good and gooey when warmed up!

    This is super sticky to mold. I like using gloves sprayed with cooking spray when molding. If you use a measuring cup to get exact measurements, you can lightly spray the inside of the cup as well, so it doesn’t get stuck in there.
