How To Make Pumpkin Pie Rice Krispies
1. In a large pot over medium heat, melt 2 tablespoons butter.

2. Add 2 cups mini marshmallows and stir continuously until melted.

3. Fold in 2 cups of Rice Krispies cereal until coated in the marshmallow mixture.

4. Spray a 9-inch pie dish with cooking spray. Pour the Rice Krispie mixture inside and press it against the rim to form the crust. Set aside as you make the filling.

5. In the same large pot, melt 3 tablespoons butter.
6. Stir in the pumpkin puree and pumpkin pie spice until well incorporated.

7. Add 3 cups mini marshmallows and stir continuously until melted.
8. Stir in 2 drops of orange food coloring. You can add another drop if you want more color.

9. Fold in the remaining rice krispies cereal until coated in the mixture.

10. Immediately pour the mixture into the center of the pie plate and press it down into an even layer. Make sure it’s pressed against the crust so that it sticks together.

11. Let it set for 20 minutes before serving. Top with whipped cream if desired.

Important Recipe Notes

You can skip the pumpkin puree if you like. It’s not much and just moistens the center of the pie. It gives it some more pumpkin flavor and mellows out the sweetness of the marshmallows just a bit. However, you can just add pumpkin spice and maybe some vanilla extract if you’d like.
Another idea for some pumpkin flavor is to use pumpkin flavored marshmallows. You may want to only use it for the “filling” as it will change the color of the “crust” orange.
Instead of pumpkin spice you can use ground cinnamon. A mixture of the two will work as well.
The longer it sits, the more it will harden! Let it sit for 20 minutes just to firm up (it firms up pretty quickly off the heat) and then serve. If it becomes too hard, you can always give it a quick microwave for 5-10 seconds. It’s really good and gooey when warmed up! Just serve it on a dessert platter like you would real pie.
This is super sticky to mold. I like using gloves sprayed with cooking spray when molding. If you use a measuring cup to get exact measurements, you can lightly spray the inside of the cup as well so it doesn’t get stuck in there.
