Ingredients For This Fox Chili

  • For the Chili:
  • 2 lbs ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 poblano pepper, diced
  • 4–5 cloves garlic, minced
  • 1 (15 oz.) can tomato sauce
  • 1 (15 oz.) can diced tomatoes, undrained
  • 4 cans kidney beans, drained and rinsed
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • Salt and pepper, to taste
  • For the Fox:
  • Ritz or butter crackers
  • Sliced black olives
  • White cheddar cheese

How To Make Fox Chili

1. Brown the beef: Add the ground beef to a large soup pot or Dutch oven and cook over medium heat until browned.

2. Add the vegetables: Stir in the diced onion, bell pepper, and poblano pepper. Cook until the vegetables are softened.

3. Drain if needed: Carefully drain any excess grease from the pot.

4. Add the garlic and seasonings: Stir in the minced garlic, chili powder, cumin, paprika, salt, and pepper. Cook for about 30 seconds, stirring constantly.

5. Add the chili ingredients: Stir in the tomato sauce, undrained diced tomatoes, and kidney beans.

6. Simmer: Bring the chili to a gentle simmer. Cook uncovered for at least 30 minutes, stirring occasionally.

7. Spoon the finished chili into a bowl and smooth the top.

8. Cut Ritz or butter crackers into triangle shapes and place two at the top of the bowl to create the fox’s ears.

9. Add sliced black olives for the fox’s eyes and nose.
