In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Melt the butter by microwaving for 30 second increments, and give it a minute to cool.
Make a well in the flour mixture, and add the egg. Give it a whisk without mixing into the flour.
Add the milk, melted butter, vanilla, and a generous amount of green gel food coloring, about 2 tsp. Whisk just a bit, then fold the batter together with a spatula. There will still be a few lumps, that’s okay.

Let the batter rest for about 5 minutes.
Heat a large skillet over medium high heat.
Spray with nonstick spray, and add about 1/4 of the pancake batter per pancake. My large skillet can make 3 pancakes at a time. Alternatively, you can use a griddle to make even more.

Cook 2-3 minutes until sides start to look fluffy and the top of the pancake is bubbly. Flip.
Cook 2-3 minutes more on the other side.
Repeat until all the pancakes are made.
Stack the pancakes and top with your favorite toppings.
