  • 3 cups finely shredded cheddar cheese (divided: 2 cups + 1 cup for coating)
  • 2.5 tablespoons sour cream
  • 1/2 teaspoon garlic powder
  • 1/4 cup real bacon bits or pieces (optional)
  • 1 oz packet ranch seasoning
  • 4 oz diced pimientos, drained (for the “eraser”)
  • 4 oz chopped black olives, drained (for the “pencil tip”)
  • Large mixing bowl

1. Mix the Base
In a large mixing bowl, combine the softened cream cheese, 2 cups of shredded cheddar, sour cream, garlic powder, bacon bits (if using), and ranch seasoning. Stir until well combined.

2. Shape Your Pencil
Lay out a piece of plastic wrap, large enough to wrap your cheese mixture. Spoon the cheese mixture onto the center and fold the plastic over it. Gently shape the cheese ball into a long pencil form — one end tapered like a sharpened tip and the other flat like an eraser.

3. Chill It
Place the wrapped cheese pencil in the refrigerator for at least 1 hour. This helps it firm up and hold its shape.

4. Decorate the Pencil
Carefully unwrap the chilled cheese ball and transfer it to a serving platter. Press the remaining 1 cup of shredded cheddar around the middle to form the “wooden shaft” of the pencil.

    Ingredients

          2 (8-ounce) blocks cream cheese, softened

          2.5 tablespoons sour cream

          1/2 teaspoon garlic powder

          1/4 cup real bacon bits or pieces

          1 ounce packet ranch seasoning

    Instructions

    1. Combine the softened cream cheese, 2 cups of shredded cheddar cheese, sour cream, garlic powder, bacon bits, and ranch seasoning in a large mixing bowl.
    2. Tear off a long enough piece of plastic wrap to fold it back over the cheese ball, giving room to lengthen it into a pencil shape.
    3. Mold the cheese ball into a pencil shape.
    4. Chill in the refrigerator for at least one hour to set.
    5. Remove the cheese ball from the refrigerator, remove the plastic wrap, and carefully transfer it to a serving platter.
    6. Press the remaining 1 cup of shredded cheese onto the shaft of the pencil, leaving room at the top for the “eraser” and room at the bottom for the “sharpened tip”.
    7. Press the diced pimientos onto the top for the eraser.
    8. Press the chopped black olives onto the bottom for the sharpened tip.
    9. Serve with wheat thins, crackers, or veggies.
