In a large mixing bowl, combine the softened cream cheese, 2 cups of shredded cheddar, sour cream, garlic powder, bacon bits (if using), and ranch seasoning. Stir until well combined.

2. Shape Your Pencil
Lay out a piece of plastic wrap, large enough to wrap your cheese mixture. Spoon the cheese mixture onto the center and fold the plastic over it. Gently shape the cheese ball into a long pencil form — one end tapered like a sharpened tip and the other flat like an eraser.
3. Chill It
Place the wrapped cheese pencil in the refrigerator for at least 1 hour. This helps it firm up and hold its shape.

4. Decorate the Pencil
Carefully unwrap the chilled cheese ball and transfer it to a serving platter. Press the remaining 1 cup of shredded cheddar around the middle to form the “wooden shaft” of the pencil.

Ingredients
● 2 (8-ounce) blocks cream cheese, softened
● 3 cups finely shredded cheddar cheese (separated into 2 cups and 1 cup)
● 2.5 tablespoons sour cream
● 1/2 teaspoon garlic powder
● 1/4 cup real bacon bits or pieces
● 1 ounce packet ranch seasoning
● 4 ounces diced pimientos, drained
● 4 ounces chopped black olives, drained
Instructions
- Combine the softened cream cheese, 2 cups of shredded cheddar cheese, sour cream, garlic powder, bacon bits, and ranch seasoning in a large mixing bowl.
- Tear off a long enough piece of plastic wrap to fold it back over the cheese ball, giving room to lengthen it into a pencil shape.
- Mold the cheese ball into a pencil shape.
- Chill in the refrigerator for at least one hour to set.
- Remove the cheese ball from the refrigerator, remove the plastic wrap, and carefully transfer it to a serving platter.
- Press the remaining 1 cup of shredded cheese onto the shaft of the pencil, leaving room at the top for the “eraser” and room at the bottom for the “sharpened tip”.
- Press the diced pimientos onto the top for the eraser.
- Press the chopped black olives onto the bottom for the sharpened tip.
- Serve with wheat thins, crackers, or veggies.
