Ingredients

Produce

     3 to 5 bell peppers in assorted colors

     1 large cucumber

     Celery stalks

     Baby carrots or carrot sticks

     Cherry or grape tomatoes

Optional Add-Ins

     Snap peas

     Bell pepper strips

     Broccoli florets

     Sugar snap peas

Dip

     Ranch dressing or preferred vegetable dip

Tools

     Sharp knife

     Cutting board

     Spoon for removing pepper insides

Instructions

1.   Wash all vegetables thoroughly and dry well.

2.   Slice the cucumber into even rounds. These slices will act as wheels for the train cars. It will take four slices per car, so plan accordingly.

3.   Cut the tops off each bell pepper. Remove seeds and membranes carefully using a spoon.

4.   If any of the pepper stand lopsided or won’t stand at all, trim a thin slice from the bottom as needed. The goal is a flat base so each pepper stands upright on the board.

5.   Select one pepper by checking the bottoms carefully. Confirm there are no holes before adding dip. Spoon ranch or another dip into this pepper.

6.   Cut celery into sticks sized to fit inside the bell peppers.

7.   Fill the remaining bell peppers with vegetables such as carrots, celery, tomatoes, or other favorites.

8.   Line the bell peppers in a row on a serving board to form the train.

9.   Press cucumber slices gently against the sides of each bell pepper to resemble wheels. Adjust spacing so the train looks connected.
