These blueberry lemon waffle pops are a fun and delicious summer breakfast treat for kids! Easy to make and perfect for brunch, parties, or a sweet snack.

Ingredients

 

For the Waffles:

– 2 cups all-purpose flour

– ½ cup sugar

– 1 tbsp baking powder

– ½ tsp baking soda

– ½ tsp salt

– 2 large eggs

– 1 cup buttermilk

– ½ cup vegetable oil or melted butter

– Zest of 1 lemon

– ¾ cup fresh or frozen blueberries

 

For the Lemon Glaze:

– 1 cup powdered sugar

– 1 tbsp lemon juice

– 1-2 tbsp water

– Yellow food coloring

– Purple food coloring

 

For Assembly:

– Lollipop or popsicle sticks

Instructions

 

1. Make the Waffle Batter:

   – In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

   – In another bowl, whisk together the eggs, buttermilk, oil (or melted butter), and lemon zest until well combined.

   – Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.

 

2. Cook the Waffles:

   – Preheat your waffle iron according to the manufacturer’s instructions.

   – Once preheated, coat the iron with a little non-stick spray or melted butter if needed.

   – Pour enough batter onto the waffle iron to cover the surface and close the lid. Cook until the waffles are golden brown and cooked through, about 4-5 minutes.

 

3. Cool and Cut:

   – Let the waffles cool slightly on a wire rack. Once cool enough to handle, cut them into squares or your desired shapes.

   – Insert a popsicle stick into each piece of waffle. (Alternatively, you may insert the sticks while still in the waffle maker to ensure a solid connection, but be careful not to burn yourself.)

 

4. Prepare the Glaze:

   – In a small bowl, mix powdered sugar with lemon juice and water until smooth. Adjust the consistency by adding more lemon juice or powdered sugar as needed.

   – Divide the mixture into two bowls and add yellow food coloring to one and purple food coloring to the other. Mix until you achieve the desired colors.

 

5. **Glaze the Waffle Pops:**

   – Dip or drizzle each color of glaze over the waffle pops, making sure they are evenly coated.

 

6. **Serve and Enjoy:**

   – Let the glaze set for a few minutes, then serve your Blueberry Lemon Waffle Pops! They can be enjoyed warm or cold.

 

Tips:

– For extra flavor, consider adding a pinch of cinnamon or a splash of vanilla extract to the waffle batter.
