These blueberry Earth Day hand pies are an easy Earth Day dessert for kids and adults. Made with blueberry pie filling and puff pastry, these delicious hand pies are an easy way to celebrate Earth Day.
-Preheat the oven at 375.
-Put the blueberry filling in a bowl.
-Zest the lemon with a microplane and put the zest in the bowl with the blueberry filling.
-Cut the lemon in half and squeeze a little bit of the lemon juice into the filling. Mix the ingredients until combined.
-Put a small amount of flour on a flat surface and rollout the puff pastry dough until its flat and the lines are gone.
-Use the round cookie cutter to cut out circles in the puff pastry dough.
-Place the puff pastry circles on a cookie sheet lined with parchment paper.
-Scoop 1-2 tablespoons of blueberry filling on half of the circles. Try to keep the filling in the middle of the circle.
-Place the egg in a small bowl and stir it, until mixed.
-Use a pastry brush to put the egg wash on the edges of the circles that contain the blueberry filling.
-Place the remaining dough circles on top of the blueberry filling.
-Use a fork to pinch the edges of the circles closed.
-Use the pastry brush to add more egg wash over the top of the of the pastry dough.
-Cut 2 small slits in the top of the dough.
-Bake the pies in the oven for 20 minutes or when the tops turn brown.
-When the pies are done set them aside to cool.
Making the Icing
-Put the powdered sugar, vanilla extract and heavy cream in a bowl. Mix with a whisk until combined. If the icing is too runny add more powdered sugar.
-Take out a quarter of the icing and put it into a smaller bowl. Next put 2 drops of green food gel color into the smaller bowl and 3 drops of blue food gel color into the bigger bowl. Mix each bowl of icing one at a time, cleaning the spatula in-between.
-Put the green colored icing into a piping bag.
-Dip the blueberry pies one a time into the blue icing. Be sure to shake off any excess icing before laying the pies flat.
-Next cut a small hole on the tip of the piping bag with the green icing. Pipe random shapes over the small pies to create mini earths.
-Let the earth pies sit for 10 minutes to allow the icing to crust over.
-When the icing is dry, Serve and Enjoy!
Store these pies in a cool dry place in a air tight container for 2 day or in the fridge for up to 5 days.
This recipe only uses half the can of filling and 1 sheet of puff pastry so it can easy be doubled by using all of the ingredients in the packaging. You can also save the left over ingredients by putting them in air tight containers in the freezer for up to a month.
If you want to make the pies more fun add sprinkles to light up the world.
